The National Restaurant Association's
Ethnic Food Study shows that 90 percent of Americans have tried Mexican
(second in popularity to Italian), while 85 percent eat it often or at
least occasionally.
Why has this widespread popularity
lasted? The ever-increasing migration of cultures into the United States
as well as Americans' experiences abroad is influencing what we eat and
how we eat. And this is particularly true when considering the
influences of our neighbors south of the border.

according to McCormick & Company's 2002 Crave It! study, barbecue ribs

flavors," says Celebrated Chef Susan Goss, chef and co-owner, Chicago's
West Town Tavern.
While barbecue is often associated with

way into modern kitchens and can be found on menus in all types of
restaurants.
